Sprinkles Cookies

Being a baker gives me a chance to unleash my creativity.  I have discovered ways to hone  my baking skills and develop my artistry. It is not easy given my prior career but the repetitive work helps me tackle whatever issues I come across with.

As for turn down treats, I find it challenging to think of  what to serve our in-house guests.  Cookies are well- loved so I am not crossing it off yet from the list of my daily turn down treats.  Making a cookie with the same stuffing could be boring so I came up with the idea of changing the stuffing every now and then. I did some trial and after getting the result I was looking for, I decided to use similar  recipes but add different stuffing in the batter to achieve a new look, taste and texture.

This cookie recipe is from allrecipes.com. The original recipe called for  M & M's. I used colorful jimmies instead. I also opted to sprinkle them on top instead of mixing them with the batter. They turned out perfectly.

Sprinkle Cookies:
220 g packed brown sugar ( I reduced to 200g )
100 g white sugar
205 g shortening
2 eggs
8 ml vanilla extract
310 g all-purpose flour
5 g baking soda
6 g salt
sprinkles for garnish

Directions:

1. Sift together flour, baking soda and salt
2. In a bowl of electric mixer, mix sugar, eggs, shortening and vanilla thoroughy.
3. Add the flour mixture to creamed mixture. Blend well.
3. Drop teaspoonful of dough onto cookie sheet. Slightly flatten dough, garnish with sprinkles.
4. Bake in preheated 175C (350F) for 9-11 minutes on until done.
