Eggnog Mousse



We have an abundance of surplus eggnog in stock.  It cost a lot and I hate seeing money go down the drain so I started to transform it into something delicious for our guests to enjoy.   I had not done any eggnog-related goodies before.Thanks to the internet which offered a hundred uses, I found a mousse recipe worth making.






Vanilla Pudding: 
190 ml half and half (half milk and half cream)
40 g white sugar
10 g cornstarch
a pinch of salt
2 ml vanilla extract
6 g butter, diced

Procedure: 
Combine the cornstarch, sugar and salt in a bowl. Heat half and half in a saucepan until bubbles form along the edges.  Add the dry mixture into the hot milk, a little at a time, stirring until dissolve. Continue cooking until mixture thickens enough to coat the back of the spoon. Do not boil. Remove from heat. Stir in vanilla and butter. Pour through a fine sieve to get rid of lumps. Let cool.


Eggnog Mousse Recipe: 
2 cups eggnog
200 g vanilla pudding
300 g whipped cream, divided
1/4 tsp ground nutmeg

It's too simple to make. Just whisk together vanilla pudding and eggnog. Add nutmeg. Fold in half of whipped cream. Spoon into your serving glass. Top with the remaining whipped cream. Sprinkle with ground nutmeg ( which I forgot). Serve.
