Eggless Banana Pancake

One of the best, safest and cheapest places to stay when traveling in China is hostels. I did quite a lot of winter backpacking and all those times I stayed in hostels. What I loved the most about hostels was the home-styled food they offer their customers. Here's one that I looked forward to eating when I'd gone back to my hostel after a long day outside - banana pancake.  Simple yet very satisfying.

When I woke up the other day and saw the banana on the table, a thought came to me. Make a banana pancake similar to the ones I used to order in hostels in China.




 I ran out of eggs so I made an eggless pancake.

Eggless Banana Pancake:
yields 1

Ingredients:
1/2 cup all-purpose flour
1/2 tsp sugar
1/2 tsp cinnamon
1 tsp baking powder
1/2 cup soy milk
1/2 TBSP vegetable oil
1/2 TBSP water
1/2 tsp vanilla extract
1 TBSP butter (melted and cooled)
1 medium size banana

you also need a large pan


Procedure:
Combine dry ingredients. Mix well.



Add soy milk, vegetable oil, water, vanilla extract, and melted butter. Mix well.




Ladle the batter into the hot pan. Once you see bubbles form on the surface flip the pancake with a spatula and continue cooking until pancake is golden brown.



Transfer pancake into a plate. Slice the bananas and arrange them along one side of the pancake.




Fold one side over. Drizzle with honey and serve.
