Amaretto Spiked Chocolate Truffles

I don't celebrate Valentine's Day. Since it is celebrated by many people, I created a delicious treat to mark the occasion. I made amaretto spiked dark chocolate truffles so our guests could have something sweet to relish. The amaretto added a bit of kick to these luscious homemade dessert. I decorated them with brightly colored sprinkles for a more festive look.

Amaretto Spiked Chocolate Truffles Recipe: 
Adapted from Simply Recipes

227 g semi-sweet chocolate, chopped
120 ml heavy cream ( I used whipping cream)
10 ml amaretto
colorful sprinkles to garnish

1. Place the chocolate into a clean, dry bowl.
2. Pour cream into a heavy saucepan. Bring the cream to a simmer. Make sure you scrape the sides of the saucepan every few minutes.
2. Remove from heat when bubbles start to form along the edges of the saucepan.
3. Pour the cream into the chocolate. Add amaretto. Allow to stand for a few minutes. Stir until smooth.
4. Chill until ganache hardens. ( I chilled mine overnight).
5.  Roll into a ball.  Place in a cookie sheet lined with baking paper. Chill.
6. Garnish with sprinkles.
