Edible Centerpieces



These eye catching  centerpieces from  past Sundays never failed to amaze the resort's guests, both young and old. Thanks to the new sous chef's artistic skills, everyone got to enjoy his edible creations.

Fruit Centerpiece



This tall fruit centerpiece stands on our dessert table next to the fruit section at our famous Sunday brunch . The eye-catching carved fruit whets the appetite of guests for some nutritious food.

Watermelon Masterpiece



We have a new member in the kitchen, a sous chef who never ceases to amaze me with his talent of turning an average looking fruit into a masterpiece.  He has only been with us for a few weeks and has done a handful of  fruit carvings  and let me say he does a more elaborate and painstaking work among his peers. His impressive creation now graces the dessert table at our famous Sunday brunch.

The Sous Chef's Creations



Fruit carvings are laid out on display at the resort's cold room during brunch. The carvings mainly serve as table centerpiece but they can also be used as dessert.This past Sunday, the sous chef did a beautiful presentation by decorating the dessert table with these intricately carved watermelon and cantaloupe. Kudos to her for single-handedly carving them all!

Time for a change



It's nice to see something new for a change. This Sunday past, the cold kitchen staff turned the fruit and vegetables into animal sculptures. The rather unusual fruit and vegetable display has captured the hearts of our guests once again.

Papaya Carving



There has been a  great interest and fascination for fruit carving among the staff at the main kitchen. The resort's famous Sunday brunch features different  carved fruit creations every week. The table centerpiece definitely adds a wow factor to the event.

White Radish Swan



A watermelon rose carving with a pair of  white radish carved into swans depicting the bride and groom made an elegant table centerpiece at the wedding. The swans on top added a little flair to the rather traditional watermelon carving. It's something new and different which the guests enjoyed.

Honey Dew Melon Bird Carving



Flower carving in fruits and vegetables is common around here. The usual centerpiece that grace the dessert table at brunch are carved roses. You could imagine how amazed everyone was when last Sunday the staff at the cold kitchen made this beautiful craft.

Carved Watermelon Bowl




It takes skill and ingenuity to accomplish such a lovely creation. The demi chef de partie and commis II teamed up to make a carved watermelon bowl. The new "attraction" at Sunday brunch is breathtaking. It has once again inspired our guests.

A Beautiful Fruit Arrangement




This gorgeous fruit arrangement is truly eye-catching! The vibrant colors and the fruit display give life to the ordinary dessert table. Anyone who visits  the "cold room" is mesmerized by it.  The lady in-charge deserves an applause for a job well done which is why I decided to feature her work on here.  Nobody can do fruit plating as beautiful and elaborate as she can.

More Elaborate Fruit Arrangement



Our new demi chef de partie exhibited another complex fruit arrangement for brunch. The fruit's bright colors reflected the sunny tropics of the resort island. Her work has been the highlight of the dessert room and is wowing not just the staff but the  guests as well.

Elaborate Fruit Platter




We welcomed a new member to our kitchen staff not so long ago. She works with the cold kitchen. Apart from her job as demi-chef de partie, she also handles vegetable and fruit carving and fruit arrangements. She does a fantastic job! I am mesmerized with everything I have seen so far. Her works deserve a blog entry(ies) which is why I asked her permission to feature her creations whenever possible.

This is the first of many entries that you will be seeing in the weeks to come.

Wedding # 4 Centerpiece



The sous chef  never ceases to amaze me with his creations. For this year's fourth wedding, he created this party centerpiece using two watermelons. He carved multiple roses into one watermelon and the names of the couple into the other.

Wedding #3 Watermelon Centerpiece




The sous chef  has once again exhibited his fruit carving skill with this watermelon centerpiece. He used the yellow flesh this time. I prefer the  red watermelon as it creates a more striking effect.   I have been wanting to learn from him but due to my manic work schedule I haven't had the chance to do so, let alone watch him carve. As expected, this  impressive work of him has brought smile and joy to the couple.

Wedding Fruit Carving



The sous chef who does fruit carving is back! He'd been away for quite some time after his wedding. I've missed seeing his creation as he does his work intricately. He's been doing fruit carving since he resumed his position in the kitchen. His recent creation was this watermelon centerpiece at the wedding recently. It must have been exhausting carving the names of the bride and groom in cursive style. And as a bonus, he carved rose out of beetroot which added a nice touch to the table centerpiece

Just Another Wedding Centerpiece and Outtakes



Seeing carved fruits or vegetables excites me. Soon as the sous chef placed the watermelon centerpiece on the table, I grabbed my camera and snapped. As I looked closer, I couldn't help but admire another intricate beauty of sous chef's handiwork. He carved not just one but more flowers into the whole watermelon, leaving just a bit of space in the middle for  the wedding couple's names.

Wedding Centerpieces and Some Outtakes



I felt awe looking at the beautifully decorated beach club. The wedding was being held on the beach. Everyone's eyes were on the bride as she walked down the sandy beach so I took the chance to take pictures of the wedding reception venue. The first thing that caught my attention was this intricately carved cantaloupe. It blew my mind as I examined layers upon layers of its detailed petals.

A Vegetable Tray For Thai Cooking Class

How much skills and patience are needed to carve a fruit so intricately? I wonder. This watermelon carving was the center of a vegetable tray used during Thai cooking class at the resort. Another handiwork of the resort's sous chef. Since joining the team, the vast majority of the kitchen staff have taken some time to learn and even improve their carving skills. Some can now carve roses out of carrots and potatoes. It's a time- consuming activity but seeing the result is rewarding.
